Cauliflower Sweet Sushi
Ingredients:
Serves 3-4
For the cauliflower rice
1 small onion, diced1 tsp coconut oil
1 large head of cauliflower
2 tbsp rice vinegar
2 tbsp all natural honey
1 tsp tahini
Some sea salt
For the fillings
1 small avocado1 large carrot
1/2 cucumber
200 g fresh salmon/ crab meat/ tuna
2 tbsp all natural honey

Directions:
For the cauliflower rice
Grate the cauliflower with a grater or in the food processor to the texture of fine crumbs. Squeeze all the excessing water out of it with your hands.
In a large saucepan heat up the coconut oil on medium heat and fry the diced onion for a few minutes.
Now add the cauliflower and fry for 2-3 minutes. Constantly stir until the cauliflower have softened a bit.
Take off the heat and add the rice vinegar, honey, tahini and salt and set aside or put in the fridge to let cool down completely.
For the fillings
Cut the avocado, cucumber and carrots into long skinny stripes.
Prepare the fish so that you can place it on the cauliflower rice later.
Place the nori sheets on a bamboo mat and spread 3-4 tbsp of the cauliflower rice onto the each sheet. It should fill about 2/3 of the nori sheets.
Place the veggies and fish onto it and again- drizzle some of the honey on top of everything before rolling it up.
Roll up into a long roll by folding in the bottom third first (about 6-8 rolls/ nori sheet).
With a sharp knife, cut into rolls and place on a big plate or wherever you want to serve it!
NOTE: Don’t expect cauliflower sushi taste exactly like real sushi! It is different and has an own taste to it! But hopefully you’ll like it and besides that- it’s low carb.
